Hello, alumni!
As many of you may remember, Mr. Nichols loved chocolate chip cookies so much that he always had a jar of freshly baked cookies in his office to share with others. It was a special way to make sure everyone knew his door was always open for a chat. So every Oct. 10, Mr. Nichols’ birthday, we have chocolate chip cookies and remember the significant role he played in our special school. (See more about Mr. Nichols below.)
This year, since students cannot enjoy Cookie Day together on our campuses, we are sending Howard’s cookie recipe to all of them, and to you (see below)! We encourage you to bake chocolate chip cookies this weekend, in honor of Mr. Nichols. Feel free to send photos of yourselves baking and enjoying your cookies to communications@harker.org.

Ingredients:
6 oz. butter (soft)
3/4 c. brown sugar
1/2 c. sugar
2 eggs (beaten)
1 tsp. vanilla
2 1/4 c. flour
1 tsp. baking soda
2 c. chocolate chips
1 c. chopped pecans (optional)
Yields 40 cookies
Instructions:
heat oven to 375
sift together dry ingredients
cream butter and sugar
add eggs and vanilla
add dry ingredients until dough comes together
scoop and bake 8-10 minutes
